Unsaturated fatty acids account for approximately 90% of camellia oil, with saturated fatty acids accounting for only about 10%. This ratio is exceptional among vegetable oils. By comparison, olive oil typically contains 80%-85% unsaturated fatty acids, soybean oil about 85%, and rapeseed oil about 82%. More notably, the content of oleic acid (a type of unsaturated fatty acid) in camellia oil has been determined to be higher than that in olive oil. Oleic acid's stable chemical structure makes it less susceptible to oxidation and deterioration during storage and cooking, effectively preserving its properties.
Camellia oil nutritional ingredients
In addition to its fatty acid composition, camellia oil also contains a variety of unique ingredients. Its raw material comes from the seeds of the oil-tea camellia tree, which grows in the mountains and forests of southern China. After experiencing the four seasons of autumn, winter, spring and summer, the fruit matures, and the nutrients accumulated in its seeds are also richer.
Substances like vitamin E, camellia glycosides, tea saponins, tea polyphenols, and squalene are relatively rare in common edible oils like olive oil. Tea polyphenols are a naturally occurring ingredient found in plants like tea leaves, while squalene is widely distributed in various organisms in nature and has even been found in the livers of deep-sea sharks. Together, these ingredients contribute to camellia oil's unique nutritional combination.
When choosing cooking oil, the composition and ratio of fatty acids are important considerations. Different fatty acid compositions will give the cooking oil different characteristics in taste, stability, and nutritional composition.
