Upgrading is a natural process in modern life, and cooking oil is just as important as rice. In the past, when resources were scarce, our parents used rapeseed oil and lard to cook. Later, peanut oil, corn oil, and soybean oil replaced them, and now we're using camellia oil, flaxseed oil, and olive oil to cook. Just like the development of the times, as technology becomes more advanced, our bodies should also become healthier.
Previously, we consumed a lot of n-6 series oils, mainly from soybean oil, peanut oil, and corn oil. These oils can promote inflammatory responses and easily raise LDL cholesterol levels, increasing the risk of cardiovascular and cerebrovascular diseases. In contrast, the newer generation of n-3 series oils, mainly from flaxseed oil, walnut oil, and perilla oil, can improve inflammation levels, lower triglycerides, and effectively reduce the risk of stroke. Our intake of n-3 series oils is currently insufficient.
After knowing the properties of cooking oil, I didn’t expect that after decades of eating, the oil I had eaten before was not only too simple, but excessive intake would also increase blood lipids and block blood vessels. With the mentality of giving it a try, I switched to a new generation of oil for cooking. The amount of oil used in 2 to 4 dishes per meal is likely to exceed the standard. The amount of cooking oil consumed per person per day is required to be controlled at 25 to 30 grams, about 3 teaspoons, which needs to be paid attention to currently.
Camellia oil is a recommended vegetable oil for stir-frying. It is extracted from the seeds of the camellia tree and is rich in monounsaturated fatty acids and vitamin E. It has antioxidant properties and helps improve vascular health. It has a high smoke point and is suitable for stir-frying in Chinese cooking.
Flaxseed oil is recommended for cold dishes. It is rich in n-3 polyunsaturated fatty acids, which have a good anti-inflammatory effect and can improve blood lipid health. It is not suitable for stir-frying and is suitable for people who want to improve their vascular health.
Olive oil is recommended for cold dishes. It is rich in n-9 monounsaturated fatty acids, which have antioxidant effects. It is not suitable for stir-frying and is suitable for people who want to improve their cardiovascular health.
