China's edible oil and processing industry has entered a new stage of "eating well" at the stage of "eating well". Edible oil no longer simply acts as the role of cooking medium and energy source, and has become an important carrier of nutritional balance.
In order to implement the "China Good Grain and Oil" action plan, LS/T 3249-2017 "China Good Grain and Oil Edible Plant Oils" was formulated in 2017. Its highlight is that it requires high requirements for nutrients in vegetable oils.
First, quantify the content of unsaturated fatty acids such as ω-3, ω-6, and ω-9 in major vegetable oils.
The nutrition of oils mainly refers to fatty acid nutrition. Most of the vegetable oils are mainly unsaturated fatty acids. Among them, the content and proportion of omega-3, omega-6, and omega-9 determine the nutritional characteristics of various plant oils.



The second is to determine the "indicator" of the nutritional accompaniment of vegetable oil.
The relationship between the nutritional accompaniment of oil and fat is closely related to human health. The types and contents of nutritional accompaniment in different types of oils are largely different. As a result, various oils have different nutritional values and health functions.



In the past, most of the indicators of edible oil were process indicators, with limited safety indicators. LS/T 3249-2017 "China Good Grain and Oil Edible Vegetable Oil" was based on existing national standards for food safety. Incorporate a security claim indicator.
